Tojiro’s 1000/3000 Whetstone is ideal for home chefs, and is a simple way to hone knives with minimal fuss, thanks to its combination construction of two fine gauged sides. All you need to do is submerge the Whetstone in water for three minutes, and then remove it from the water. While the Whetstone is still wet, use the desired side of the stone to sharpen your knives. The rose side of the stone features a 1000 level of grit for removing chips and reshaping edges, while the mustard side of the stone features a 3000 level of grit for edge restoration.
